An Easy Way to Get Kids to Eat Vegetables

Sometimes, one of the challenges of parenting is getting children to eat what's good for them. When I came across this pin which was linked here, I knew I wanted to create a version of it to see if Sophia and Olivia would be more likely to eat vegetables.

By the end of dinner, only a few bits and pieces were left.

Here's what is on the plate:

- Thinly-sliced carrot sticks with low-fat French-onion dip.

- Celery with peanut butter and raisins.

- Cashews.

- Crackers with low-fat cream cheese spread and topped with a tomato slice. (For the cream cheese spread, I added to plain cream cheese some dried basil from the garden, dried onions, and dried garlic flakes.)

- Cheese slices.

This is such a simple idea, yet one that was well-received. By the time dinner was over, there were only a few things left on the plate.

Each item is a few bites, so it is an easy way for kids to get different vegetables, fruit, and proteins in a snack or as part of a meal. I definitely will be doing this again.
